Join Josephine from her kitchen in Nairobi and learn how to make authentic Kenyan dishes from scratch! Josephine will join us via Zoom and teach us how to make chapati, ugali, curry and vegetables using techniques and recipes passed down from her family. Her recipes feature easy substitutions to make the meal friendly for vegetarians and vegans.  

Registration is required. A valid email address is also required; a special Zoom link will be emailed to registrants the day of the program.

If you want to cook along with Josephine, have following ingredients on hand:

Vegetables:
1/4 cabbage 
1 medium carrot
1 tablespoon of butter/margarine/oil

Ugali:
1 cup cornmeal (preferably fine grind)

Chapati:
3 cups of all-purpose flour
Tablespoon of sugar
salt
cooking oil
1 tablespoon of margarine or butter

Curry:
Chicken or beef or fish or vegetables* to put into your curry
Ginger
1 clove of garlic
2 tomatoes
2 medium onion
 1 cup plain yogurt

Spices:
¼ teaspoon cardamom
1 teaspoon of cumin
½ teaspoon ground cinnamon
black pepper
1 teaspoon turmeric
(optional: substitute these spices for curry paste)


Utensils: a bowl, a rolling pin (a wine bottle works if you don’t have one), a grater

*for vegetable curry, use a combination of the following based on your preferences: broccoli, cauliflower, large carrots, red/yellow/green peppers, potato, green peas, coconut milk, corn.
